1 box Duncan Hines lemon cake mix
1 box pineapple instant pudding
3/4 c. Wesson oil
4 eggs
1 (10 oz.) 7-Up
Mix dry ingredients; add oil and eggs; mix well. Slowly add 7-Up; mixing well. Bake at 350 degrees for 35 minutes.
ICING:
1 stick butter
1 tbsp. flour
1 1/2 c. sugar
2 eggs
1 sm. can crushed pineapple
1 tbsp. vanilla
1 sm. can coconut
Mix sugar, flour and eggs; beat well, until smooth. Add pineapple, butter and vanilla. Bring mixture to a boil, lower heat and stir until thick. Cool; add coconut and frost cake.
