7 - UP LAYER CAKE

1 box lemon cake mix
1 box instant pineapple pudding
2/3 c. oil
4 eggs
1 (10 oz.) 7-Up

Combine dry cake and pudding mixes; add oil. Beat in eggs, one at a time. Add 7-Up and beat well. Bake in 350 degree oven about 30 minutes or until cake test done. This cake can be baked in greased layer pans or 13 x 9 x 2 inch pan.

7 - UP LAYER CAKE FROSTING:

1 1/2 c. sugar
1 tbsp. flour
2 eggs
1 flat can crushed pineapple
1 stick butter
1 tsp. vanilla
1 sm. can coconut
1/2 c. chopped pecans

Combine sugar and flour. Add eggs and mix well. Add pineapple, butter, and vanilla. Bring to a boil and cook about 5 minutes. Let cool and add coconut and chopped pecans. Spread over cooled cake.
