Cowgirly's Coconut Cake

Ingredients

* 1 (18 ounce) box white cake mix
* 1 (14 ounce) can sweetened condensed milk
* 13 1/2 ounces coconut milk
* 2 cups flaked coconut (reserve and toast 1/2 cup)
* Cool Whip, 12 oz

Directions

1. Bake cake according to package directions in a 13X9 pan. While cake is cooling, take a fork and poke holes in it.
2. In a nonstick saucepan, mix the sweetened condensed milk and the coconut milk. Heat until it begins to boil. Drizzle it over the baked cake. Sprinkle the 1-1/2 cups of flaked coconut and nuts on top of the cake.
3. When the cake has cooled completely, frost with the whipped topping and sprinkle with the remaining 1/2 cup coconut. (I like to toast the coconut for the top in the oven first before sprinkling it. If you don't toast it, you can color it though which works well for themed cakes.

Dino Cake

Basic shape: Victoria Sandwich with a piece cut off the side which was used for the legs.

Decor: The cake was covered with butter icing (coloured with cocoa). After Eight style mints were used to make the spinal spikes and those on the tail. The head is a piece of sponge covered in fondant icing. The legs were made from the left over sponge from the victoria sandwich. The plant and the dinosaur tail were made from fondant icing. There is a head support inside the plant.

Note: There are many variants of this basic shape. The cat cake featured on this page is one. You could also consider making a dragon, a dog or a hippo for example.

Dolphin Cake

Basic shape: Made from a normal Victoria sandwich cake. To get extra height to the cake it may be advisable to use more cake mixture (ie. a 3 egg mixture) or to add a third cake layer.

Decor: The cake was covered with swirled butter icing using blue food colouring on the knife as it was swirled. The fondant half dolphin was made separately and added to the top. The 'Happy Birthday' outer paper was made on a home computer.

Star Cake

Basic shape: Rectangular slabs of cake sandwiched together and cut to shape using a template.

Decor: The cake was covered with butter icing (coloured yellow). The butter icing was also piped to make the trail and the writing. Unfortunately the day was very hot!

Basic shape: Made from a two slabs of cake sandwiched together with butter icing and cut to shape (like Victoria sandwich on its side).

Decor: The fondant icing was cut to cover the cake. It was stuck on with honey. The handle is a length of liquorice supported with cocktail sticks. The arial is a drinking straw covered with tinfoil (much safer than a piece of wood or a skewer would be).

Peter Rabbit Cake

Basic shape: Made from a slab of cake cut to shape using a template.

Decor: The cake was covered in butter and fondant icing. The buttons are dolly mixtures. The eye and feet were made by melting chocolate and forming a puddle on greaseproof paper and allowing it to cool.

Island Cake

Basic shape: A simple, rectangular slab of cake sculptured into an island shape and decorated with fondant icing.

Decor: The orange 'sand' layer was put on first, followed by the green layer. The shelter is supported by 'Matchmakers' both as upright posts and as crossbeams to support the roof. The rocks were made from sponge and covered with fondant icing, then painted with black liquid food colouring. The animals were bought ready made.

Game Boy Cake

Basic shape: Made from a slab of cake shaped using a paper template.

Decor: The fondant icing was cut to cover the cake. It was stuck on with honey. The writing was piped onto the cake last. The yellow and orange icings were put into the icing bag together to get the mixed effect in the 10 and the stars.

Basic shape: Large flat sponge cake cut to shape from a prepared paper template. Possibly sandwiched, depending on the depth of the cake.

Decor: Pieces of fondant cut, shaped and joined with water to cover the shape. Piped, heavily coloured butter cream for water.

Basic shape: Made from a slab of cake sculptured in the centre to make a dip.

Decor: The cake was covered in fondant. The edges were marked to look like pages with a knife.
The cover is a small strip placed around the edges. The writing is piped Royal Icing. The page numbers denote the age of the child. (She was 8, now she is 9)

Cinderella Cake

Basic shape: Skirt piece was made in a pudding basin. A piece of sculptured cake was added to the top of this to make the upper skirt piece. The head was made entirely from fondant icing. This did present problems because of the fondant icing being quite soft and being unable to support the upright position. Probably better to prepare it early to enable some drying out or to make it from something else, possibly marzipan.

Decor: The frills surrounding the skirt were made from a semi circular cut piece of fondant with the centre taken out, leaving a strip in an arc shape. The edge of this was then rolled with a cocktail stick.

Basic shape: A simple, rectangular slab of cake with decoration.

Decor: The coloured butter icing to make the shape of the dog was put on the cake first. The outline was made afterwards by drizzling chocolate from a spoon.

Cat Cake

Basic shape: Made as a normal, round 'Victoria Sandwich' and then stood on it's side.

Decor: The flowers were bought ready made. The whiskers were made from fibre optics. The grass was made by grating fondant icing.

Teddy Cake

Basic shape: Taken from a template shape of the bear prepared on paper first. This can be done with any animal shape as there is no three dimensional quality to this cake except for the depth.

Decor: I uncurled a Liquorice Cartwheel and used strips to define the feet areas. The rest of the decor is made from Smarties and Liquorice Allsorts.

Alligator Cake

Basic shape: Eight shaped cake with a head and a tail. You may be able to hire a tin from a cake decoration shop.

Decor: The cake was covered with butter icing (coloured green). The head was formed in sponge and covered with fondant. The tail and feet were made entirely of fondant. Can't remember the thinking behind spelling it wrong...was it deliberate? I don't know, it was a long time ago!
