Black Joe Cake Recipe

Ingredients

Cake:
2 cups flour
2 cups sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 cup coffee cream (also called light cream)
1/4 cup cold water
1/2 cup corn oil
2 eggs
1 teaspoon vanilla
1 cup boiling coffee

Frosting:
1 stick softened margarine
1 pound confectioners' sugar
Milk to taste
Vanilla to taste

Cooking Directions

For Cake:

Preheat oven to 300 degrees. Grease and flour two 9-inch cake pans. Sift flour, sugar, cocoa, baking powder, soda and salt into a mixing bowl. Add remaining ingredients. Stir to blend. Divide batter between prepared pans. Bake 45 minutes.

For Frosting:
Mix margarine and confectioners' sugar. Beat in milk by tablespoonfuls to desired consistency. Add vanilla to taste.
