Strawberry Cream Cake With Custard Filling

Ingredients

1 box yellow cake mix (2 layers)
1 pkg. (12 oz.) frozen strawberries (thawed)
2 cartons whipped dessert topping (10 oz. each Dream Whip)

Cooking Directions

Bake in 2 (9 inch) layer cake pans according to package directions. When cool slice each layer in two (4 layers).

Mix strawberries with 1 carton Dream Whip. Spread half the mixture on one cake layer. Add second cake layer, spread with custard filling, add third cake spread with remaining strawberry mixture. Add top cake layer. Frost entire cake with remaining carton Dream Whip. Refrigerate overnight.

Custard Filling:

Ingredients

1/3 c. sugar
1 tbsp. corn starch
1/8 tsp. salt
1 tsp. vanilla
2 egg yolks (beaten)
1 tbsp. butter
1 c. milk

Cooking Directions

Combine sugar, cornstarch and salt in a saucepan. Stir in milk. Cook and stir over medium heat until thick and bubbly. Stir 1 tablespoon hot mixture in egg yolks. Return mixture to pan stirring constantly. Cook and stir 2 minutes. Remove from heat. Stir in butter and vanilla. Refrigerate until chilled covered with waxed paper.

Note: Try the cake with strawberry icing or strawberry frosting

Icing:

Ingredients

3 cups confectioner's sugar
1/4 package frozen strawberries, thawed
2 tsp milk
4 oz cream cheese 1/2 package, add more if needed.

Cooking Directions

Mix sugar, strawberries and milk until blended. Add cream cheese, add more if not thick enough for you. Beat on high until well blended and creamy. Spread over cake or cupcakes and enjoy.

Frosting:

Ingredients

1 c. sugar
1/2 c. sliced fresh or frozen (thawed and drained) strawberries
1/8 tsp. salt
1 egg white, room temp.

Cooking Directions

In top section of double boiler, combine all ingredients. Beat with electric beater to blend well and dissolve sugar. Place over boiling water and continue beating until frosting stiffens and holds its shape, about 4 minutes beating time. Remove from heat and continue beating until cool, about 2 minutes. Especially good for large angel food or sponge cake. Happy Caking!!

What is the recipe for the top glase using jello.. my Mom used to do this for her cakes in the summer and then arrange fresh fruit in the jello before it set.. so lovely to look at!
