AMANDA'S ZUCCHINI CAKE

1 pkg. (2 layer) yellow cake mix
1 pkg. (4 serving) Jello instant pudding
Vanilla flavor
4 eggs
1/4 c. oil
3 c. grated zucchini
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. chopped nuts

Combine all ingredients in mixer bowl. Blend, then beat at medium speed of electric mixer for 4 minutes. Pour into greased and floured 10 inch fluted tube or tube pan. Bake at 350 degrees for 50 to 55 minutes or until cake tester inserted in center comes out clean and cake begins to pull from sides of pan. DO NOT UNDERBAKE. Cool in pan, 15 minutes. Remove from pan and finish cooling on rack. Sprinkle with confectioners sugar, if desired.
