CAKE:
1 box Duncan Hines lemon cake mix
4 eggs
1 sm. box instant vanilla pudding
3/4 c. corn oil
1 (10 oz.) bottle 7-UP
Combine first 4 ingredients, then slowly add the 7-UP. Beat well. Put into 9x13 pan. Bake at 350 degrees for 30-40 minutes.
TOPPING:
2 eggs
1 tbsp. flour
2 tbsp. cornstarch
1 c. crushed drained pineapple
1 c. coconut
1 1/2 c. sugar
1 stick butter
1 c. chopped nuts
Blend sugar, flour and cornstarch; then add eggs, butter and pineapple. Cook over medium heat until thickened (8-12 minutes). Add coconut and nuts. Spread on cooled cake while mixture is still hot.
