BEM CAKE

INGREDIENTS

1 cup seedless raisins, boiled in 2 cups water until 1 cup water remains
1 cup sugar
2 tablespoons shortening
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
2 cups all purpose flour

COOKING DIRECTIONS

Combine all ingredients thoroughly but do not overbeat or cake will become tough.

Bake in a 325-350 degree oven until toothpick inserted in center comes out clean.

This is an economical cake which was used during the rationing period of WWII when ingredients like butter, eggs, and milk were sometimes hard to come by.
