CARROT CAKE

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1-2 tsp cinnamon
1/2 tsp salt
3/4 cup brown sugar
1/2 cup raisins
1/2 cup chopped nuts
2/3 cup vegtable oil
2 eggs
1 cup shredded carrots
1/2 cup crushed pineapple
1 tsp vanilla

Preheat oven to 350F degrees.

Sift together flour, baking soda, baking powder, cinnamon and salt. Stir in sugar, raisins, and nuts.

Make a well in dry ingredients and add oil, eggs, carrots, pineapple and vanilla. Combine until blended.

Turn batter into a greased and floured 8" pan.

Bake at 350 for 40 to 45 minutes.
