1 box yellow cake mix
4 eggs
1 (4 1/2 oz.) box pineapple or vanilla instant pudding
3/4 c. oil
1 c. 7-Up
Combine cake mix, eggs, pudding and oil. Beat until light and fluffy. Add 7-Up and beat well. Pour into greased 9x13 inch pan. Bake at 350 degrees for 40 minutes or until cake tests done. Frost immediately.
PINEAPPLE ICING:
1 1/2 c. sugar
1 tbsp. flour
2 eggs, beaten
1 stick butter
1 c. crushed pineapple with juice
1 c. shredded coconut
Blend sugar and flour in saucepan. Add eggs, butter and pineapple. Cook over medium heat, stirring constantly, until it thickens. Remove from heat, add coconut. Spread over warm cake.
